Zucchini Fritters

Zucchini Fritters remind me of hash browns, but WAY more delicious. Enjoy these low-carb fritters with breakfast, as a mid-day snack, or as a dinner side dish.  Zucchini is also one of those great vegetables that is packed with nutrients, is fiber-rich, and supports optimal health and the cardiovascular system.  In just twenty minutes you can enjoy these vegetable packed patties!

This recipe yields 5 servings, about 15 fritters total.




Ingredients:

  • 1.5 lbs zucchini, grated (about 4)
  • 1 egg
  • 1/4 cup flour
  • 1-2 garlic cloves, minced
  • 1/4 cup parmesan cheese, grated
  • 2 tbsp olive oil
  • salt & pepper to taste

Directions:

First, you want to take out all the water from the grated zucchini.  Make sure to keep the skin on, as it is packed with nutrients.  In a strainer, pour salt over grated zucchini and let sit for a few minutes.  Then squeeze out all the liquid, either by hand or with a cheese cloth.  Try to get as much water out as you can.  The more water in the zucchini, the more soft your fritters will be.  They are much better on the crispy side!

In a bowl, bring together drained zucchini, egg, flour, garlic, parmesan, and salt & pepper.  Stir well until the mixture is evenly mixed.

In a skillet over medium heat, add olive oil and spoon out zucchini mixture (about the size of small pancakes).  Flatten each fritter with a spatula and flip when one side turns a golden brown, about 3-4 minutes on each side.

Serve warm.
