Sweet Potato Hummus

Sweet potatoes are one of those super beneficial power foods that can be easily adapted into anybody’s diet. Sweet potato hummus contains beta-carotene (from the sweet potatoes), which supports the immune system and possibly vision too.  It also contains soluble fiber (from the garbanzo beans), which supports cardiovascular health.  There are too many nutritious ingredients in this sweet potato hummus to miss out on!  Enjoy with multi-grain crackers, chips, or whole wheat pita bread.   Vegetables such as carrots, peppers, cucumbers, or broccoli also go great with this healthy sweet potato hummus.

Ingredients:

  • 2 sweet potatoes, peeled and cut
  • 1/2 cup garbanzo beans (or chickpeas)
  • 1 garlic clove, minced
  • 2 tbsp lemon juice
  • 2 tbsp sesame seed, grounded (or 1/4 cup tahini)
  • 2 tsp ground cumin
  • 2 tbsp olive oil
  • salt & pepper to taste
  • 1/4 tsp paprika for garnish

Directions:

In a steamer basket over the stovetop, add sweet potatoes and steam until soft, about ten minutes.  Make sure the sweet potatoes are already peeled and cut into cubes in the steamer.

{Or, you could boil the peeled and cut sweet potatoes in a pot of water.  Once the potatoes are cooked, drain them and add to the blender.}



In a blender, add sweet potatoes, garbanzo beans, lemon juice, garlic, sesame seed, cumin, and olive oil. Blend on high for about 1-2 minutes, or until everything is blended smooth.  My sesame seeds were whole when I bought them, so I simply ground them in my coffee grinder.

{You can also use tahini instead of sesame seeds.  I always try to use really simple ingredients that I can use again, which is why I used sesame seeds.  Tahini paste or tahini sauce is made from sesame seeds, lemon juice, garlic, and water, so you could easily make it yourself.}

Refrigerate for an hour to cool off and serve with a dash of paprika.

  • 1/2 cup garbanzo beans, drained & rinsed Or, chickpeas
  • 1 garlic clove, minced
  • 2 tbsp lemon juice, freshly squeezed About 1-2 lemons
  • 2 tbsp sesame seed, grounded Or 1/4 cup tahini paste
  • 2 tsp ground cumin
  • 2 tbsp olive oil
  • salt & pepper to taste
  • 1/4 tsp paprika for garnish, optional

Instructions

  1. In a steamer basket, add peeled and cut sweet potatoes.  Steam about ten minutes, or until soft.

  2. In a blender, add sweet potatoes, garbanzo beans, lemon juice, garlic, sesame seed, cumin, and olive oil. Blend on high for about 1-2 minutes, or until everything is blended smooth.

  3. Refrigerate for an hour to cool off.  Sprinkle a dash of paprika on the hummus and serve with multi-grain crackers, pita bread, or vegetables!
