Skinny Taco Bowl

I’m always looking for healthy recipes that:

a. contains simple ingredients (skinny taco bowl ✓)

b. tastes yummy (skinny taco bowl ✓), and

c. are easy to make (skinny taco bowl ✓)

This skinny taco bowl recipe includes all three of those things.  Plus, you can still celebrate taco Tuesday, or taco Wednesday, or taco Saturday (Or all 3 as I do).  I could definitely eat this 3 or 4 times a week and not get sick of it.  Everything tastes so fresh and all the ingredients compliment one another very well.

A taco bowl can be made with ground turkey, chicken, steak, or shrimp, but in this recipe I use ground turkey (feel free to use your favorite).  I also include how to make your own taco seasoning, but you could also use a pre-made packet bought at the grocery store.  Quinoa is my favorite to go with this dish, although you can substitute rice, or if you are REALLY doing a low carb diet, lettuce or spinach.  Lastly, I make a vegetable/bean medley, containing freshly cut cilantro, lime juice, black beans, onions, and corn.  This vegetable/bean medley is so delicious you could even scoop some up with a tortilla chip and eat it as a salsa.  Just smelling the fresh cilantro and lime makes my stomach growl.  Talk about clean eating!  Follow below for one of my favorite recipes ever.

Taco Bowl Ingredients:

  • 1 lb ground turkey
  • 1 (15oz) can black beans, rinsed and drained
  • 3 tbsp cilantro, fresh and chopped
  • 1 cup corn, frozen
  • 2 limes
  •  3 tbsp salsa
  • taco seasoning, see below to make your own, (or use pre-made packet)
  • 1 red onion, chopped
  • 1 cup quinoa, dry (makes 2 cups cooked, about 4 servings)
  • 1 avocado, sliced

Home-made Taco Seasoning:

  • 1 tbsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp oregano
  • 1/2 tsp paprika
  • 1/4 tsp pepper, ground black
  • 1/2 tsp salt

Directions:

First, in a skillet cook ground turkey and discard grease.  While that is cooking, start cooking quinoa in a pot.  Measure out quinoa and water (1 cup quinoa and 2 cups water) for 4 servings.  Follow cooking instructions for quinoa on package.

Second, in another skillet bring together corn, onion, cilantro, and black beans.  Squeeze 1 tbsp lime juice and salt to taste over mixture.  Stir and let simmer for about ten minutes, or until steamy.taco bowl

Third, when all grease is discarded from ground turkey, mix in taco seasoning and salsa.  Continue cooking until ground turkey is brown and cooked all the way through.

Fourth, in a bowl, serve quinoa, seasoned ground turkey, and vegetable/bean medley.  Top it off with avocado, lime wedges, and cilantro.  Check out my first attempt at making an avocado rose in the picture below!  (If you want to learn how, I included the link where I learned.)

  • 1 cup corn, frozen
  • 3 tbsp cilantro, freshly chopped
  • 2 limes
  • 1 red onion, chopped
  • 2 tbsp salsa
  • taco seasoning, home-made see below Or, pre-made packet
  • 1 cup quinoa, dry Or, enough for 4 servings

Home-made Taco Seasoning Ingredients

  • 1 tbsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp oregano
  • 1/2 tsp paprika
  • 1/4 tsp pepper, ground black
  • 1/2 tsp salt

  2. In another skillet, bring together corn, onion, cilantro, and black beans.  Squeeze 1 tbsp lime juice and salt to taste into mixture.  Stir and simmer for about 10 minutes, or until steamy.

  3. After all grease is discarded from ground turkey, stir in taco seasoning and salsa.

  4. In a bowl, serve quinoa, seasoned ground turkey, and vegetable/bean medley.  Top it off with sliced avocado and lime wedges.

  5. Gobble up!
