Simple Shrimp Stir Fry And Fried Rice

At least once a week the Asian food craving strikes.  Stir fry is always the answer, but whether to use chicken, shrimp, or steak is the question.  I chose shrimp, frozen shrimp.  Follow along to make this simple shrimp stir fry and fried rice.

This shrimp stir fry and fried rice is really simple and does not require various sesame oils, sesame seeds, ginger, or rice vinegar.  While all those ingredients do make a great stir fry (and probably more authentic), it can be much simpler (especially if you rarely have those items in your pantry like myself).  As this recipe cuts some corners, it still fulfills those Asian food cravings.  I used broccoli, onions, and frozen peas, but equally good substitutes could be sugar snap peas, bell peppers, frozen carrots, zucchini, or any vegetable in your refrigerator!

You will need two pans, a rice cooker (or a pot if you make the rice on the stovetop), a small bowl, and an appetite.

Ingredients for Shrimp Stir Fry :

Shrimp Stir Fry

  • 1 lb shrimp, thawed, peeled and deveined
  • 3 cups broccoli, florets
  • 1 tbsp brown sugar
  • 1 tsp cornstarch
  • 2 cloves garlic, minced (Or 1/4 tsp garlic powder)
  • 3 tbsp soy sauce, reduced sodium
  • 1 tsp sriracha sauce
  • 1/2 yellow onion, chopped

Ingredients for Fried Rice :

  • 1½ cups brown rice, (Or 2 rice measures if you are using a rice cooker)
  • 1 cup frozen peas, (Or 1/2 cup frozen peas and 1/2 cup frozen carrots)
  • 2 eggs
  • Salt and pepper to taste

Directions :

Start the rice first, as it takes the longest to make.  I use my Black & Decker rice cooker which comes with a rice measure (different from a regular measuring cup).  Pour 2 rice measures and 3 cups of water into the rice cooker and click start.  This will take 40 minutes in the rice cooker.  If you are cooking the brown rice over the stovetop, it’s about 1½ cups rice and 3 cups water, or follow instructions on package to make four servings.

Next, take a small bowl and mix together soy sauce, sriracha sauce, brown sugar, corn starch, and ½ tsp of water (this helps dissolve the cornstarch).

In one large skillet, bring together broccoli, onions, and garlic and sauté until soft.  At the same time in another small skillet, cook shrimp until slightly pink.  The shrimp will cook faster than the the vegetable mixture, so once the shrimp are slightly pink, add the shrimp to the vegetable skillet along with the soy sauce mixture. [Again, you can use any vegetables you like: zucchini, sugar snap peas, bell peppers, squash, etc.]

Use the same skillet from the shrimp and add frozen peas to one side and eggs on the other.  It’s okay if they mix, as they will eventually be mixed together anyway.  Cook until eggs are scrambled and peas are unthawed.  Once rice is finished, add the peas and scrambled eggs to the rice.  Stir well so peas and eggs are evenly distributed throughout.  Season with a little salt and pepper.

Fried Rice Ingredients

  • 1 1/2 cups brown rice
  • 3 cups water
  • 1 cup frozen peas Or, 1/2 cup frozen peas and 1/2 cup frozen carrots
  • 2 eggs
  • salt & pepper to taste

Instructions

  1. Add rice and water to rice cooker. Click start. (Takes about 40 min.)

  2. In a small bowl, mix together soy sauce, sriracha sauce, brown sugar, corn starch, and 1/2 tsp of water (to dissolve cornstarch)

  3. In a large skillet, bring together broccoli, onions, and garlic. In another skillet, cook shrimp until slightly pink. Add shrimp and soy sauce mixture to vegetable skillet. Keep cooking and stirring until vegetables are soft. (About 25 min. total)

  4. In the same skillet from the shrimp, add frozen peas and eggs. Cook until eggs are scrambled and peas are fully cooked. Once finished, add to cooked rice and stir well.

  5. Serve shrimp stir fry over fried rice and enjoy!
