Shrimp Fajitas

This Shrimp Fajitas recipe is super simple to make, (I’m talking beginner’s level), it’s healthy, and it’s so authentically delicious.  What more could you ask for?  Basically you mix all the ingredients together in a large bowl, spread the mixture over a baking sheet, bake for eight minutes, and broil for two.  What is that little “broil” button on your oven you ask?  It’s kind of like grilling, but right in your oven.  It cooks food with direct, high heat causing it to brown as if its been on a grill.  Also, a great way to caramelize vegetables.  Follow along to make Shrimp Fajitas in twenty minutes.  Yields four servings.

Ingredients:

  • 1 lb shrimp, detailed and deveined (I used frozen medium shrimp)
  • 1 1/2 bell peppers, chopped(I used green and red)
  • 1/2 red onion, chopped
  • 1 tbsp olive oil
  • 1/2 tsp ground black pepper
  • 1/2 tsp salt
  • 1 1/2 tsp chili powder
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp ground cumin
  • 1/4 tsp paprika
  • corn tortillas
  • optional toppings: cheese, avocado, sriracha, lettuce



Directions:

Measure and bring together everything in a large bowl.  If you are using frozen shrimp, make sure to thaw it out first by running warm water over it.  Remove the tails and devein shrimp before putting it in the mixture. For the bell peppers, I used one whole green pepper and a half of a red pepper, but you may use whichever color green pepper you’d like.

Over a lightly greased baking sheet, spread shrimp mixture so that it is flat and not overlapping too much.  You may have to use two pans.

Bake at 450F for about eight minutes.  Then switch your oven to “broil” and broil for about two minutes.  Keep an eye on the shrimp mixture, so as not to burn it.

Serve over warm corn tortillas.  I quickly heated my corn tortillas up in the George Foreman grill.  Feel free to heat them up over the stovetop or in the microwave.

Instructions

  2. Spread mixture evenly over a lightly greased baking sheet.  Make sure not to overlap too much.

  3. Bake at 450F for eight minutes.  Then broil for two minutes. 

  4. Serve over warm corn tortillas and add optional toppings: cheese, avocado, lettuce, sriracha.
