Sausage Stuffed Mushrooms

Sausage Stuffed Mushrooms are like edible tasty boats filled with a hearty, full of flavor concoction.  The sausage mixed with vegetables and spices give it a burst of flavor.  Sometimes the best dinners are made even better with easy servings.  What I mean is that each person grabs a mushroom filled boat, maybe some rice or quinoa on the side, and everybody is happy.



Ingredients:

  • 1/2 lb Italian sausage
  • 4 Portobello mushrooms
  • 1 (14.5 oz) can crushed tomatoes
  • 1 bell pepper, chopped
  • 1/2 yellow onion, chopped
  • 2 cloves garlic, minced
  • 1/2 tsp oregano
  • 1 tbsp olive oil
  • salt & pepper to taste
  • 1/2 cup mozzarella cheese, shredded

Directions:

First, start cooking the sausage  in a skillet over the stovetop.  In another pan, bring together olive oil, peppers, onions, garlic, oregano, and salt and pepper to taste.  Simmer and stir until the mixture gets soft.

Wash the portobello mushrooms and with a spoon gently remove the gills and stem on the inside.  Place in a lightly greased baking sheet.

Once the sausage is cooked, cut them into small pieces and add into the pepper, onion, and garlic mixture.  Next, add in the can of crushed tomatoes.  Let simmer for about ten minutes, stirring occasionally.

Spoon out mixture into the mushroom boats and top it off with mozzarella cheese.  (Note I am cooking only two mushrooms here, but the recipe is for 4 servings.)

Bake at 375F for 10-12 minutes or until cheese is completely melted.  Lastly, turn on broiler and broil for about 2 minutes to brown the cheese on top a little bit (this step is optional of course).

Serve warm with your favorite side dishes.  Yields 4 servings.

  6. Bake at 375F for 10-12 minutes or until cheese is completely melted. Optionally, turn on broiler and broil for about 2 minutes, or until the cheese is slightly browned.  Serve immediately with favorite side dishes!
