Quinoa Crust Pizza

Everybody loves pizza, but sometimes those calories add up quickly (especially the crust)!  This quinoa crust pizza recipe is made with a blender and a few simple ingredients.  Quinoa is a healthy grain that is gluten free and high in protein.  So what’s not to love about a healthy pizza that tastes good?  Follow along for this easy DIY quinoa crust pizza.

This quinoa crust pizza yields two servings.  Easily double the recipe for more heavy eaters 🙂

Ingredients:

  • 3/4 cup quinoa, rinsed and drained
  • 1/4 cup water
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp olive oil
  • 1/2 cup tomato sauce
  • 1 cup mozzarella cheese, shredded

Optional Toppings:

  • 3 boneless, skinless chicken breast, cooked & shredded
  • 1 (8oz) package mushrooms, sliced
  • 1/2 red onion, chopped
  • 3 garlic cloves, minced
  • 1-2 cups kale, chopped
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 tsp salt




Directions:

Pre-heat oven to 425 F.

For the crust, wash and rinse the quinoa with a strainer, or just soak it overnight and drain the next day. Add the drained and rinsed quinoa to a blender along with the water, baking powder, salt, and olive oil. Blend for about 2-3 minutes until everything is well blended.  It will appear to be a thick batter.  Pour into a greased 9″ nonstick pan.  I’ve used the glass pan before and the crust will stick even if you grease the pan, so I recommend a nonstick pan, OR you can line any pan with greased parchment paper.  Bake for 15 minutes, then flip the crust with a spatula and bake for another 10-12 minutes until the crust is a golden brown.

While you are waiting on the crust in the oven, over the stovetop cook chicken breasts in a covered skillet on low until they get completely cooked through.

In another skillet, lightly sauté your pizza toppings.  I chose mushrooms, onions, garlic, and kale.

Once the chicken is cooked through, remove the chicken from the skillet and pull apart with a fork and knife.  Discard liquid from the skillet and place the shredded chicken back into the skillet, adding in the onion powder, garlic powder, Italian seasoning, and salt.  Stir together and set aside.

Once the pizza crust is finished cooking, evenly spread tomato sauce over the quinoa crust.  Sprinkle mozzarella cheese over the tomato sauce, then top it off with the shredded chicken and vegetable mixture. Feel free to put even more cheese overtop the toppings.

Bake at 425F for 10-12 minutes, or until cheese is melted.
