Cocoa Peanut Butter Oatmeal Power Bites

Cocoa Peanut Butter Oatmeal Power Bites are small-bite sized goodness rolled up into little balls.  Power bites are healthy snack bites filled with power foods, protein, omega-3, fiber, and many more nutrients.  They contain very low sugar and are naturally flavored and sweetened.  A great alternative to a sugar filled granola bar, or a nutrient-less bag of goldfish or chips.  There are only eight ingredients involved, and the best part is you do not have to bake anything.  Yep, thats right do not bake these power bites!

Snack on this healthy cocoa peanut butter oatmeal power bites recipe!  Fill those little hunger pains between meals, or for a little boost of energy.  I like to enjoy power bites with a cup o’ joe in the morning or after a workout when I’m tired and my body is depleted of nutrients.

Ingredients:

  • 1 cup oats, uncooked
  • 1/2 cup peanut butter
  • 2 tbsp honey
  • 1/2 cup ground flaxseed
  • 1/4 cup cocoa powder, unsweetened
  • 2 tbsp chia seeds
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Directions:

First, in a medium size bowl measure out and add oats, ground flaxseed, cocoa powder, chia seeds, vanilla extract, and salt.

Second, in a small microwaveable bowl, microwave peanut butter and honey for about 25-30 seconds to melt and have more of a liquid consistency.

Third, pour peanut butter and honey mixture into the first bowl filled with all of the ingredients you just measured out.  Give it a good stir.  Sometimes it is easier to use your hands to really mix everything together.

Fourth, with your hands, start rolling the mixture into about 1 inch thick balls.  My mixture made 15 bites.

Fifth, cover and refrigerate for at least 15 minutes and enjoy!  Store in airtight container in refrigerator or freeze for later.
