Peanut Butter Oatmeal Cookies





Peanut butter oatmeal cookies are one of my favorite cookies.  They are simple, somewhat healthy, and contain only six ingredients.  These are especially handy when you make them at the spur of the moment because chances are you have all of the ingredients right in your kitchen.  I like to enjoy these cookies with a hot espresso! Yum, the sweet peanut butter and bitter espresso complement one another like bees and honey.

Ingredients:

  • 1/2 tsp baking soda
  • 1/2 cup brown sugar
  • 1 egg
  • 1 & 1/4 cup oats, old-fashioned or quick-cooking
  • 1/2 cup peanut butter
  • 1/2 tsp vanilla extract (optional)




Directions:

In a stand up mixer, or in a bowl with a hand-held mixer, cream brown sugar, egg, peanut butter, and vanilla extract.  Add in oats and baking soda.  Mix well for about 3-4 minutes.  You could also do this by hand, although it may be an arm workout 🙂

Spoon out onto a greased baking sheet and press down with a spoon or fork to flatten dough.  Yields about 12-15 cookies, depending on the size you make them.

Bake at 350F for about 8 minutes, or until golden brown.  Let cool and serve!

Ingredients

  • 1/2 tsp baking soda
  • 1/2 cup brown sugar
  • 1 egg
  • 1 1/4 cup oats, old-fashioned or quick-cooking
  • 1/2 cup peanut butter
  • 1 tsp vanilla extract

Instructions

  1. With an electric mixer (or by hand), cream together brown sugar, egg, peanut butter, and vanilla extract. Add in oats and baking soda. Mix well for about 3-4 minutes. 

  2. Spoon out onto a greased baking sheet, pressing down the dough with with a fork or spoon to slightly flatten it.

  3. Bake at 350 F for about 8 minutes, or until golden brown. Let cool and serve!
