Orange Almond Muffins

Orange Almond Muffins are a perfect blend of a citrus and nutty flavor. A light, and healthy muffin, which would also work as a foolproof brunch item, breakfast side, mid-day snack, or dessert.  This orange almond muffin recipe is made with no butter, oil, or processed sugars.  It gets its natural sweetening from honey and freshly squeezed orange juice.

I made these orange almond muffins in a mini muffin pan, making perfect bite-sized pieces. It yielded 20 mini muffins, or if you use a regular size pan, about 10 muffins.

Ingredients:

  • 3/4 cup all purpose flour
  • 3/4 cup oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup original apple sauce
  • 3 tbsp honey
  • 1 egg
  • 1/4 cup orange juice, freshly squeezed
  • 1 tsp orange peels, grated
  • 1/2 cup almonds, sliced or slivers

 Directions:

First, in a bowl combine flour, oats, baking powder, baking soda and salt; set aside.

Second, with an electric mixer, mix together apple sauce, honey, egg, orange juice, and orange peels.  Gradually add in flour mixture.  Mix until blended.  If you do not have an electric mixer, just mix with a big wooden spoon and add in flour mixture in small portions until everything is mixed together.

Third, stir in almonds with a wooden spoon.

Fourth, in a lightly greased muffin pan (I used coconut oil), spoon out mixture.  The mixture makes twenty mini muffins, or about 10 regular sized muffins.

Fifth, bake at 350F for 12 minutes in a mini muffin pan, or 20 minutes in a regular sized muffin pan. Bon Appetite!
