Lemon Herb Chicken is a classic recipe that emits a mellow, yet savory flavor in every bite.  The lemon does not overpower the herbs and vice versa.  There is a balance of zest and herb that will please any palate.  This lemon herb chicken recipe uses a crock pot which helps retain the moistness of the chicken.  You could potentially make the lemon herb chicken in the oven, although I cannot attest a juicy or dry outcome.  Therefore, I highly recommend using a crock pot or slow cooker.

I used a combination of frozen and unfrozen chicken, because that is what I happen to have in my kitchen.  If you use a crock pot, either frozen or fresh chicken will work.  Most of the herbs I use you will probably have in your pantry. If you do not have chicken broth, you could substitute it for 1 tsp of chicken bouillon granules and 1/4 cup of water.  I try to keep the lemon herb chicken simple and use the least amount of different ingredients as possible.

If you have leftovers, the chicken still tastes great heated up the next day.  Make some lemon herb chicken for the whole week and store in an airtight container to keep its freshness!

Ingredients:

  • 4 chicken breasts, boneless (frozen or fresh)
  • 1/2 cup chicken broth
  • 1 tsp dried oregano
  • 1 tsp parsley
  • 1 tsp basil
  • 1/4 tsp ground black pepper
  • 1/2 tsp salt
  • 3 tbsp freshly squeezed lemon juice (about 1-2 lemons)

Directions:

First, in a small bowl measure and mix together oregano, parsley, basil, pepper, and salt.

Second, rub the herb mixture all over chicken breasts and place in the crock pot.

Third, measure and pour chicken broth and lemon juice over chicken in the crock pot.

Fourth, cover with lid and cook on low  5-6 hours, or on high for 3-4 hours.
