Healthy Cocoa Brownies

Healthy Cocoa Brownies are a sweet treat for any chocolate lovers!  I made these cocoa brownies in a mini muffin pan, which yielded twenty-four mini cocoa brownies.  They turned out moist, sweet (but not too sweet), cake-like, and chocolatey.  There is no butter or oil in these healthy cocoa brownies, so feel to eat a LOT!cocoa brownies

Ingredients:

  • 1/2 cup apple sauce, plain
  • 1 cup brown sugar
  • 1/2 cup chocolate chips, semi-sweet morsels
  • 1/4 cup cocoa powder
  • 3 eggs
  • 3/4 cup flour
  • 1/2 tsp salt
  • 1 tbsp vanilla extract

Directions:

Start by melting the chocolate chips either in the microwave or on the stove top.  I microwaved them for about a min and stirred until they were completely melted.

Then, with a stand-up mixer, or a handheld mixer, measure and mix together the melted chocolate chips, apple sauce, brown sugar, eggs, vanilla extract, and salt in a bowl for about 3-4 minutes on medium.  You could also do this by hand if you do not have a mixer.  The apple sauce is what makes these cocoa brownies super moist and dense and is a great substitute for butter or oil.

Slowly pour in flour and cocoa powder and mix for another 3-4 minutes, or until everything is mixed together.  Here you could also add in 1/2 cup of walnuts or sliced almonds if you prefer.

Pour mixture into a lightly greased mini muffin pan. You could also use a regular muffin pan, or a brownie pan.

Bake at 375F for 10-12 minutes, or until you can stick a fork in it and there is no batter.  This time is based off of a mini muffin pan, so if you use a regular size muffin pan, it will probably take a little longer to cook.

  • 1 tbsp vanilla extract

  2. With a stand-up or handheld mixer, measure and mix together the melted chocolate chips, apple sauce, brown sugar, eggs, vanilla extract, and salt on medium for about 3-4 minutes. 

  3. Slowly pour in flour and cocoa powder, mixing on medium speed for another 3-4 minutes, or until completely mixed. Optional: here you could add 1/2 cup of your favorite nuts: walnuts, almonds, etc.

  4. Pour mixture into lightly greased 24 mini muffin pan.

  5. Bake at 375F for 10-12 minutes or until no batter is on a fork if you stick it in one of the muffins.
