Chicken and Mushroom Stroganoff

Chicken and Mushroom Stroganoff is the creamiest pasta dish you will ever try.  I’m not going to say this is very healthy, but compared to anything greasy or fried, then yes it would be considered healthy.  It’s a good thing to have a well-rounded diet, and not starve ourselves from tasty meals!  This Chicken and Mushroom Stroganoff took me only about three minutes to throw everything into a crock pot, and let the machine do the rest!  Both creamy and savory, this dish is perfect when we need some comfort food, but not feel horrible about it.  Re-heat leftovers up to two days later and it tastes just as delicious!

Ingredients:

  • 4 frozen chicken breasts, boneless
  • 8 oz package mushrooms, sliced
  • 8 oz package cream cheese
  • 10.5 oz can cream of chicken soup
  • 1 envelope dry onion soup mix
  • salt and pepper to taste
  • favorite pasta, I used angel hair pasta

Directions:

Measure and bring together everything into a crock pot, or slow cooker.  Cover and cook on low for 5-6 hours, or on high 3-4 hours.  Serve Chicken and Mushroom Stroganoff over your favorite pasta.

If you are looking for a healthier version of this recipe, use only 4 oz. cream cheese, and make your own dry onion soup mix (see recipe below).  You can also load up the veggies by adding chopped kale, more mushrooms, chopped spinach, peas, broccoli florets, or your favorite vegetables.  Lastly, serve over gluten free pasta, wheat pasta, or a bed of spinach or kale.

Ingredients for homemade dry onion soup mix:

  • 1/4 cup dried onion flakes or dehydrated onion slices
  • 2 tbsp beef bouillon granules
  • 1 tsp onion powder
  • 1/4 tsp parsley flakes
  • 1/4 tsp celery seed or celery salt
  • 1/4 tsp paprika
  • 1/8 tsp ground black pepper
  • 1/4 tsp salt
  • 1/2 tsp turmeric (optional)
