Blackened Salmon

Welcome to our page and our very first post.

We have been trying to incorporate seafood into our weekly dinners, and found a perfect salmon recipe just for that. A simple and healthy dinner, this blackened salmon is light, tasty, and easy to cook. Each and every bite has the right amount of flavor and leaves no fishy aftertaste. We paired this blackened salmon with quinoa and sweet peas. Ingredients:

  • 3 Salmon fillets
  • 1-2 tbsp Olive oil
  • 1-2 Limes
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 2 tbsp Paprika
  • 1 tbsp Oregano
  • 1 tbsp Thyme
  • 1 tbsp Brown sugar
  • 1 tsp Cayenne (optional)
  • 1 tsp Crushed fennel seeds (optional)

Directions:

  1. Pre-heat oven to 425F.
  2. I used three, 4 -4.5 ounce fillets. Since I bought mine frozen, I thawed them out by soaking them in a bowl of hot water for 5-10 minutes. Leave the individual plastic wrapping on for this, or else you might end up with a soggy mess. Once thawed, remove plastic and lightly drizzle olive oil over both sides of fillets.
  3. Measure and mix together the salt, black pepper, garlic powder, onion powder, paprika, oregano, thyme, brown sugar, cayenne, and crushed fennel seeds. If you don’t like spicy foods, then leave out the cayenne powder, or just put a dash or two. Crushed fennel seeds are optional, as you may not have this herb on hand. Fennel seeds have a liquorice, sweet flavor, but will not altar the outcome significantly.
  4. Generously rub the seasoning mixture all over the fillets. I usually do both sides, but one side works too.
  5. Bake for 15-20 minutes. Serve with a fresh lime wedge for extra zest!

This recipe is for 3 Salmon fillets. If you are cooking more fillets, then double the ingredients.

  3. Measure and Mix together all the seasoning ingredients.

  4. Generously rub both sides of all Salmon fillets with seasoning mixture.

  5. Bake for 15-20 minutes. Serve with fresh lime wedges for extra zest!

Recipe Notes

  • Fennel seed is an anise (liquorice)-flavored, sweet, and fruity herb. Still a great dish if you choose not to use this ingredient.
